Year 1: Food origins; nutrition; processing; structure; chemistry; media influences; electives. Year 2: Texture and taste molecules; food analysis; quality assurance; microbiology; psychology; allergy; electives; industrial placement students substitute some modules for management or human resources. European placement students undertake spoken foreign language training. Year 3: Designing new foods; team project; ingredient interactions; research project; food chain issues; current research revelations and disputes; diet and health; biotechnology; legislation; electives; placement students substitute some for: marketing; placement preparation; spoken foreign language training; 6-month placement. Year 4: Industrial placement and European students complete core food science modules substituted in Years 2 and 3.
